About the project
For an intimate dinner for 14 guests at Albura, Barcelona, we designed a sensory journey through Hilbert’s story, told in three acts: past, present and future.
A passport guided the journey. Each dish worked as a metaphor connecting geography, memory and decision. From smoked aubergine hummus crowned with pomegranate to Dungeness crab brioche, every creation answered to a specific place and moment, paired piece by piece with wines and signature cocktails. A live pianist set the soundtrack for the whole evening.
We chose the venue, shaped the music and atmosphere, and cared for the welcome of every guest so that everything told the same story. The journey closed looking to the future: figs, almond crumble, white chocolate ganache and honey and thyme syrup. An ending made to feel, discover and connect.
The final decision, as at Hilbert, always remains in the hands of the person.
